The role of a Chef de Partie
Manage a section within the kitchen.
Ensure that dishes are prepared and cooked according to the specific standards.
Managing the development and supervision of the Commis Chefs in the kitchen, ensuring they are fully trained and understand their duties.
Ensure that stock is rotated and controlled within the specific section of the kitchen.
Ensure the cleaning schedule is adhered to and that cleaning tasks are delegated as appropriate.
Ensure full understanding of the functional administration of the Kitchen.
Maintain a detailed Knowledge of all menus and to explain dish descriptions.
Ensure compliance with Health & Safety, Food Hygiene rules.
Ensure all policies, procedures, standards and guidelines are carefully adhered to.
The successful candidate will
Have previous experience in a Demi or Chef De Partie role, preferably within a formal, fine dining and or Banqueting environment.
Fully understand how the role contributes to the success of the Kitchen.
Maintain a good level of understanding of the hospitality industry.
Lead by example.
Build effective and constructive relationships, Communicate clearly, professionally and concisely.
Work collaboratively with others in pursuit of team goals.

Maternity Cover - Part time Conference and Events Organsier
We are looking for a personable, enthusiastic and well organised person to join our Sales team to cover the maternity leave of our Sales and Events Organiser. This is a 12 month only, part- time position, 16 hours a week with the flexibility to be able to work 8 weeks of the year full time to cover holidays. Typical hours would be Monday 1.30pm – 5.30pm, Thursday 10.30am – 5.30pm, Friday 12.00noon – 5.00pm.
What we are looking for: - Someone who is great at creating and maintaining positive and productive working relationships across the business, communicating effectively in a range of situations - Strong and confident communication and presentation skills with strong attention to detail - IT literacy with experience of packages such as Guestline and Rezlynx, MS Word, Outlook and Excel - Be motivated to work on their own and be actively involved with the team.
Your responsibilities: -
- Create and maintain strong working relationships with prospective, new, and existing clients
- Deliver the highest level of customer service and promote a helpful and professional image to the customer and give full co-operation to any customer requiring assistance with a prompt caring and helpful manner.
- Resolve any client issues and turn them around with a positive close.
- To deal with sales enquires either by telephone, in person or email, if relevant to Conference and Banqueting, Xmas etc.
- To be passionate about the services offered by the Hotel.
- To deal with all correspondence, administration and deposits as required.
- To update functions sheets and answer any queries from HOD’s.
- Order external equipment/services for conferences/functions etc. i.e. PA Systems, DJ’s.
- To positively promote sales awareness within the hotel and maximise sales opportunities.

Casual Food and Beverage Assistant Required - Restaurant
Hours will vary on a day to day basis from 6.15am starts to cover breakfast or from 2.00pm to cover evening service. Flexibility to work different shifts and weekends is essential.
